Heading out there for a few days around the 23rd, and was interested if anyone knew of any 20-40 mile rides that are moderate or easy in elevation profile.

Right now we're looking at the Port Angeles - Lake Crescent - Joyce loop, which I think might be a bit heavy for a person without clips on their bike. Just my .02.

I recommend the Joyce route, turn right at the general store and then proceed a few more miles to Salt Creek. There is a sweet point break there and some tide pools. Also these:

The turntable on which the gun and loading mechanism revolved was large enough to turn a small locomotive. Top-grade laminated steel barrels fired one-ton projectiles nearly 50,000 yards (approximately 28 miles).

I have yet to ride the Olympic Discovery trial. They kinda have a neat little helpful website, sounds like a nice ride. Considering it one-way this weekend (staying at my parents house in Port Townsend Friday night, camping lawn available... then Sat-Sun ride with an overnight camp somewhere midway - side trips could be nice? ex: http://blogs.seattletimes.com/northwesttraveler/2015/01/26/whiskey-bend-road-closed-by-slide-in-olympic-national-park/). Would benefit from a second car/shuttle back if anyone else is down, let's chat about it...
