I am getting a new rear hub, and would like to future proof it by having it be disc compatible. Plz recommend a 36 spoke 10/11spd shimano/sram compatible hub that doesn't cost $400 (chrisking).

you have exactly one choice for that: Shimano FH-RS505
only non-boutique 36h disc that's got an 11s freehub out of the box

because I'm trying hard to get under 200lbs, and I do bad things to wheels.

no kidding
Real question is what rim are you using?
Most modern rims are only available up to 32h, and 4 extra spokes are totally not worth it if it means using some Velocity bullshit to get the extra holes for em.
The best 36h 700c rim brake option I know of is the DT Swiss TK540

It's a CR18 on the back, and an Ultegra FH 6600 hub I've chewed through at least 5 builds since I bought it new back when. I'd just rebuild it again but the bearing cups are trashed and the flanges look like a teenage cutter's wrists.
I'll shop around for the next rim, only requirement is that it takes fattys, has eyeleted spoke holes and comes in black.
