I want to go check out Alpine Baldy, this new trail system near Skykomish that EvergreenMTB is working on.

Sounds like only the initial 5 miles (a road-to-trail conversion) is done and rideable, though a little brushy perhaps.
And maybe a small part of the "Phase 1" singletrack? Not really clear on how much if any is rideable yet.

And then on the way back, hit another trail system I haven't ridden but have been wanting to a while, Wallace Falls State Park:

Haven't ridden either area, so, not sure how cross-tire-friendly they are. 2" + knobbies recommended.

Leaving ~9 am, can take two more bikes/riders.

Put me down as a real solid 'probably'. Would you be anticipating being back in town by late afternoon?

Yeah, was thinking 6 pm, could even shoot for 5 pm if people want.
