I emailed Dutch Bike Seattle. They are open by appointment at the moment (but respond quickly to emails if you want to schedule one) and it sounds like the shop should be open fairly soon.

It's true; they also have among the lowest incidence of lactose intolerance and eat lots of dairy. Coincidence?
