with the correct marinade of course

it's not about the marinade it's how you cook em.

i'd opt for braising keeping the meat on the bone and making a nice demi-glace from the pan funk.

or I have a cool 7 hour leg of lamb recipe using a sealed dutch oven that that would probably turn out nice.

also go for a noob as there would have a higher fat content and more tender muscle tissue.

If we're cooking Sketchy here I'd go for the sealed dutch oven route. Just sayin it's appropriate, is all.

That sounds like too much planning. Just grab a hunk off when they pedal by.
