I have a dream of someday getting a folding bike with trailer and a folding kayak and going amphibious.

The ShuttleBikeKit is a more portable albeit less capable version of a pedal powered pontoon boat. Works with a standard bike though. Never actually tried one.

I have played around with folding bikes plus inflatable kayaks, and it works pretty well, other than the boat and paddling gear amount to quite a bit of weight.

Another option is a packraft, which only weighs in at about 5 pounds. I've been playing with the packraft plus Puglsey combo recently. Some photos here.
