it's that time again, kids: i need to cut up a dead animal. i've found a lamb guy who can sell me a lamb to be picked up on sunday or monday and cut up on monday/tuesday. who's interested? tell me quick- i need to get back to him late today or tomorrow- and this time y'all have got to pick the stuff up within a few days of cutting. i got no freezer space.
i may also be available for bike delivery, in exchange for sandwiches.
as per the usual prices will vary depending on cut (though the lamb will probably be a bit spendier than the pig was), but be decidedly below market price.
holla back.
graters gonna grate.

im in, but im not really familiar with cuts of lamb. tried to do a little internet research
-i'd like some cuts that i could grill up (medallions, leg? etc) in some kind of steak format
-some cuts for stew (foreshank cubes?)
-and if you ground any up i'd like a bunch of that to make burgers with.
advise or put me down on any cuts as you see fit. i'll pay up

FINALLY.
he's gone from a cute lamb to a pile of paper-wrapped goodness, and he's ready to be picked up. i'm doing things a little different this time: i can't keep him here at the shop, so i've already packaged him all up and have a complete inventory list, including prices and amounts per package.
he's expensive, guys.
i just did the numbers, and- even if i take a bit of a hit- the prices are high. so i'm going to post them here and y'all can decide what you still want. pm me with particulars (how many chops, how many pounds grind etc.).
rib chops: $18/#
shoulder steaks (pan roast or grill): $15/#
porterhouse (same as t-bone, includes the loin and tenderloin. as ryan pointed out great for grilling, also good for pan-roasting): $19/#
leg roast (low and slow roast. four packages total; two of them are stuffed with pesto): $16/#
ribs and skirt (teeny-tiny skirts, very cute. all good for the grill. i have one package of these: 2 baby racks and 2 skirts): $11/#
neck (to make the best lamb soup/stew EVER): $12/#
shank (low and slow braise): $13/#
cubed shoulder (chunks of stew meat): $13/#
ground lamb (i put pesto in it, and you can either add more stuff to it or eat it as-is): $13/#
graters gonna grate.

I'm definitely into making some lamb stew. I'll take two pounds of either the neck or the cubed shoulder, depending on your recommendation.

Heather, don't take a $$$ hit on this. Please. We'll work it out.
I'll take two porterhouses, and 2lbs of ground lamb.

glad to hear y'all are still interested- i had some yesterday, and he is one delicious lamb. to those who came out and ate on wednesday: i'm pretty sure this guy is that guy's brother.
jon, i'll put you down for one pound neck and one pound cubed shoulder, then you get the lovely silkiness from the neck bones plus the meat from the neck (there's a lot) plus the big delicious lamby chunks of the shoulder.
scott: no worries. once i sat down and actually did the math i just couldn't bring myself to charge any more than i already am. in the grand scheme of things it's really more of a lovetap than a hit. one might say.
scott-and-langston-and-jon-and-anyone-else-interested: i'm taking it all to my place and putting it all in my freezer today, so you can come and pick it up there (eastlake- 269 e boston st. apt 31) whenever you like. i'm generally home evenings-ish, more or less.
graters gonna grate.

to clarify: since it turned out to be more expensive than i'd expected (and probably than you expected) you'll have to speak up again, post price-list, if you still want the lamb you wanted beFORE i posted the price list.
make sense?

rib chops: $18/# - four double chops and two single chops left
porterhouse (same as t-bone, includes the loin and tenderloin. as ryan pointed out great for grilling, also good for pan-roasting): $19/#
leg roast (low and slow roast. three packages total; one of them is stuffed with pesto): $16/#
shank (low and slow braise): $13/# - three left
most of the portions are small, 'cause it's lamb. for example: one porterhouse weighs about 2.5 oz. so while the per pound prices are high the per ounce prices are not so much.
