you'll probably find the triple very knee friendly. I'd recommend upgrading both the derailleur and cranks at the same time, to keep the repairs down. Double derailleurs don't always have enough travel to cover the shift distance.
I have a well loved triple crankset that you can have. It's Ultegra, and a little ugly but it's true and largely bulletproof. The chainrings still have life left in them, and replacements are pretty cheap at ReCycled.
It's currently on my dead raleigh frame at ABR, in the back waiting for me to come by and pick it up. Hit me up if you want it.

I've got an FSA V-Drive, 175mm triple (22-32-42):

with Outboard BB. It's got a 42 Vuelta ring on there now with a chain guard running Single Speed, but you can go back to triple mode real easy - the granny and middle ring are un-used, and I barely ever used the 44. I'd do the lot for $50.

Hey Ryan, you'll need a triple crank, bottom bracket to match (interface type and spindle length) and a front derailure.
If you run friction shifting then that is a lot easier. An old square taper mtn crankset maybe what you are looking for.
You will want a 28.6 clamp (standard steel seat tube) with a bottom pull triple front derailleur (basically something in the vintage of some old tn cranks 80's or 90's)

So I should definitely buy that triple langston mentioned and call it good .
I could ride just the two small rings a while
then upgrade the front derailleur when my knee is good again
